May’s Cooks in the Kitchen submission time is here. This month’s food challenge: spinach, yum! As the Popeye the Sailor Man song danced in my head, I waffled between how best to represent this wonderful power food. Following is my entry of cream spinach.
This simple recipe calls for only a few ingredients and takes little time to prepare. Here is what you will need — fresh spinach, chopped onions, garlic, cream cheese, olive oil, lemon, salt and pepper to taste.
Step One: Add the olive oil, chopped onions, and garlic to a medium sized pan over medium heat and cook until onions are golden brown. Stirring frequently.
Step Two: Add the spinach to the pan (washed and stems cut off). Squeeze the juice of half a lemon onto the spinach. Let cook until the spinach is wilted, stirring occasionally.
Step Three: Add the cream cheese until it is completely melted into the spinach and onions.
Step Four: Serve and enjoy!

Here are the specific ingredients:
- 2 large bundled bunches of fresh spinach
- 1 white onion, chopped
- 1 to 2 cloves of garlic (depending on how much you like garlic), crushed
- juice of 1/2 lemon
- 1/4 cup cream cheese
- 2 Tbs of olive oil
- salt and pepper to taste
