My top three loves in summertime are Spaceman, ice cream and watermelon (the first two are year-round pleasers). Just when I thought I couldn’t love watermelon any more, my friend, Lori, introduced me to this watermelon salad. I have now “upped my game” in the watermelon world. Let me share…
This salad is incredibly easy to make requiring only 5 ingredients:
- Watermelon
- Pitted Kalamata Olives
- Basil
- Crumbled Feta Cheese
- Juice from a Lime
How to put it together:
- Chop all ingredients except the lime.
- Put all ingredients in a bowl and squeeze some fresh lime juice over it.
- Toss everything together.
- Enjoy!

Just be careful you do not burn down your kitchen making this dish. Sounds pretty complicated.
More likely I’d chop a tad off a finger or something with this recipe as there is no grill/oven/stove work necessary…thankfully!
